VIP Cheese Cooking Class Event Recap

If I learned one truth during the recent cooking class we hosted with Dairy Farmers of Canada, it's that Cheese Makes Everything Better. Fresh crusty bread may be good on its own, but add a nice Canadian Camembert and--hot damn! Now we're talkin'.
In fact, all of the recipes we learned during the class were simple, straightforward dishes that got a major flavour and excitement injection simply by pairing with the right Canadian cheese made from 100% Canadian milk. For any busy gal on the go, easy gourmet-inspired dishes like these are ideal for last-minute entertaining. We cooked and tasted our way through two appetizers, an entrée, and a salad.

The night started off with 20 lucky chicks, wine, cheese, and a charcuterie platter.
Then, we moved into smaller groups and got to cooking with the help of Nella Cucina's amazing chefs.
My lovely group started off with Mini Canadian Monterey Jack and Black Bean Empanadas...
Moving on to the Apple and Fennel Salad with Toasted Pecans and Canadian Camembert...
Hit up the Pancetta Jam and Canadian Brie Toast station...
...and finished at Beef Tenderloin Crostini with Canadian Blue Cheese Cream and Caramelized Onions (a personal fave! I want to marry that beef tenderloin.)
Lastly, we were treated to a Pear and Canadian Ricotta Crepe with Caramel Sauce dessert.
