10 Recipe Ideas for Thanksgiving Leftovers

For us Canadian chicks, Thanksgiving is only a few days away and I for one, am dreaming of all the delicious holiday goodness. Putting on my stretchy pants and eating as much as possible is probably one of my favourite activities. However, no matter how much I manage to pack away, each year we're always left with a mountain of leftovers. 

Usually, my Thanksgiving aftermath meal of choice is a good ol' fashioned sammy. But this year, I think I can do a little better (although, let's face it, a high piled sandwich is hard to beat). 


Recipe #1 Curried Turkey Casserole: Casseroles are easy to make and are perfect comfort foods. 

Recipe #2 Turkey Cobb Salad: Packed full of healthy goodness and you can switch up ingredients to suit your tastes. I love capers on mine!


Recipe #3 Pocket Pies filled with Leftovers: I like to think of these as a fancier, adult version of a pizza pocket. 

Recipe #4 Smoked Turkey Enchiladas with Cranberry Salsa: This is covered in cheese, and that's fine by me. 


Recipe #5 Sweet Potato Pancakes: This would make the perfect breakfast for your post-Thanksgiving festivities. 

Recipe #6 Turkey Tetrazzini: I can't imagine a better meal to come home to on a chilly night. Nothing says cozy like a pasta! 

Recipe #7 Stuffed Mushrooms: Put that stuffing to use in a mushroom cap. Great for entertaining or just any simple and light but oh so yummy dinner. 


Recipe #8 Turkey and Squash 'Thanksgiving' Risotto: I'm a total risotto fiend, so this one loaded up with all the seasons bests sounds incredible. 

Recipe #9 Leftover Turkey Pho: I am very intrigued by this Asian fusion dish. Definitely a unique and stand out meal. 

Like I said, sometimes, there is nothing better than a fabulous jam packed, old fashioned turkey sandwich. So of course, I had to include one as my last recipe. But I cheated a bit and gave you two mouth watering options:

When my family and I have thanksgiving dinner, we always end up with cranberry sauce, stuffing, and potatoes left over. And because we're such plain people, we just eat it as a side :P These are creative recipes and I'm totally going to mash up a few of these!

I love the sound of these recipes, so I just might pick up some turkey breast and make a few. We're not big on turkey, so I usually make a ham coated with a home made brown sugar honey mustard sauce, home made candy sweet potatoes, not from a can, cheese smothered broccoli and everything else that usually goes along with a turkey dinner. Oh and of course we can't forget the home made apple pie's!! I had a hard time finding an apple orchard this year that even had apples for sale where we live. Anyone else having a hard time finding fresh picked apples???
