Bake the Blues Away With Chocolate Banana Cake

Doesn't the smell of baking make you feel warm and happy no matter what the weather? A good recipe should always be shared - especially if it has some justifiably health ingredients such as bananas. So what if you eat the cake for breakfast? It's bananas! So you put it in a bowl and heaped globs of fresh ice cream on it? That's 5 important food groups: Dairy, grains, protein (the eggs), and fruits/vegetables (the bananas) and Chocolate. Listen, chocolate could totally be considered a food group what with eating it every day and the health benefits and all... At a minimum, baking anything with bananas makes your place smell better than ever. Trust.
On to the recipe!
ChickAdvisor Approved Chocolate Banana Cake
Combine and set aside:
2/3 C Milk
1 Tblsp Vinegar
*This mixture creates D.I.Y buttermilk. You can swap these two ingredients for 2/3 C Butter Milk.
Combine with a mixer:
3/4 C Melted Butter
1 2/3 C Sugar (we recommend organic cane sugar)
2 Eggs
Add:
2 Mashed Bananas (freckly ones are the best!)
1 Tsp Pure Vanilla Extract
Blend the whole lot into a smooth creamy mixture.
Sift together:
2 C Flour
3/4 C Cocoa Powder
1 1/2 Tsp Baking Powder
1 Tsp Baking Soda
3/4 Tsp Salt
Add the flour mixture to the creamy mixture, along with the Butter Milk combination you had set aside so that all ingredients are in one bowl. Mix thoroughly but don't overdo it. Then sprinkle in a few handfuls of dark chocolate chips and stir by hand. Keep your fingers out of it!
Bake at 350F for 30-45 min. Cut into squares and sprinkle with icing sugar. Serve with frothy Cappuccinos!

I just tried this today and used a 9x13 glass pan. It came out exactly as pictured. Just make sure you grease and dust the bottom of the pan or it'll stick! | |
Oh, good question. I don't know! I am so bad with those things. It depends how thick you like your cake. You can do two 9" rounds if you want to make it a layered cake or go for a big rectangular glass one. | |
