Best Cake Recipe Ever

I believe every one of us can agree that the only downside to a dessert is the guilt in the back of our mind. The mathematical calculations going on get in the way of enjoying the dessert to the fullest. Sigh. The calories in and how many more minutes we need to tack on to our workout, and well, I did take the 3 flights of stairs this morning instead of the elevator. Wouldn’t it be nice if only we could find a healthy (and yet still sweet and succulent) recipe?

Look no more, ladies! I call this the Best Ever Cake. I love to bake and I got this recipe from a close friend who was willing to share it with me. I was pleasantly surprised with the taste and texture. I must confess: I normally am a chocolate cake or cheesecake kind of person only. But after trying it, I was sold! With the ability to change a couple ingredients to make it even healthier, it’s sure to be a hit with everyone. Plus, the pineapple makes it a perfect dessert for summer.


Cake
Dry:
2 cups flour
2 cups sugar
2 tsp. baking soda
1 cup chopped nuts (I use sliced almonds but chopped walnuts or pecans are also great!)
Wet:
2 eggs
19 oz crushed pineapple with juice
2 tsp. vanilla

Icing
1 cup icing sugar
1 cup cream cheese
1/2 cup margarine
2 tsp. vanilla



1. Mix dry ingredients well.
2. In separate bowl, mix wet ingredients with blender. Then add to dry ingredients. Blend until mixed well.
3. Pour into a 9 x 13 inch pan and bake in a preheated oven at 350 for 40-45 minutes.
4. Mix icing and spread on warm cake. Chill for 2 hours before serving.

Tip: The healthier alternative is to use whole wheat flour, brown sugar, and light cream cheese. It tastes exactly the same and you don’t have to feel guilty for going back for seconds!

Ali, like I wrote, I am more of a chocolate cake person too. But this one is delicious. So light and fruity.
