British Cuisine: Eton Mess

Eton Mess is a classic British dessert, and the perfect way to enjoy the last few strawberries of summer. It’s incredibly easy to make and is always a crowd pleaser.  It's a perfect after dinner dessert - easy to whip up in the kitchen once the main course is over, but won't take much time away from your guests.

Start with the sauce - purée the strawberries in a blender, then pour through a sieve to remove the seeds.  Add sugar to taste.


Hull the remaining strawberries and slice into quarters, break meringues into small pieces.  Whip the cream until it starts to hold its shape (but isn't too firm).  Fold the meringue and the strawberries into the cream.

Serve immediately, drizzled with the strawberry sauce. It looks gorgeous in martini glasses or wide champagne glasses!


Meringues are available at select local grocers, particularly one that carries imported goods.  If you can't easily find them, you can make them at home using one of the many available online recipes.  We recommend this detailed version if this is a new recipe for you.
