Bier Markt Fondue for Two
Cheese & Lager Fondue
(Yields 4 cups)
Ingredients:
• 75g - Butter
• 75g - Flour
• 4 cups - Whole Milk
• ½ cups - Appenzeller Cheese (grated)
• ¼ cups - Raclette Cheese (grated)
• ½ cups - Emmental Cheese (grated)
• ½ cups – Heavy Cream
• 1 Tbsp – Worcestershire Sauce
• 1 Tbsp Lemon Juice
• Salt & Pepper – to taste
Method:
1. Melt butter in stock pot over medium high heat and add flour to make a roux.
2. Cook slightly for about 2 minutes and add milk while whisking – making sure not to let the sauce stick to the pan.
3. When mixture thickens reduce heat to low and slowly add grated cheeses, stirring in a zig zag patter (this helps the cheeses to melt evenly into the mixture)
4. When cheeses are incorporated, then add heavy cream, Worcestershire sauce, lemon, and adjust seasoning with salt and pepper.
5. Keep warm until ready to serve.
Suggested Accompaniments:
• Cubed Breads–such as baguette, pumpernickel, rye, etc.
• Blanched asparagus
• Boiled small potatoes
• Cherry tomatoes
• Sour Cornichons
