Easter Brunch Recipe Round Up: New Ways To Cook Eggs
Easter is one of my favourite holidays because it comes at one of the best times in the year. It's sunnier out, patio season starts and everyone comes out of winter hibernation. Speaking of patio season, one of my favourite things to do around this time and especially at Easter, is brunch! Which, yes, I consider to be an activity.
Of course, a brunch without eggs is not a brunch at all. However, I don't know about you, but the same ol' 'sunny side up' can get pretty boring after a while. So, for your sunny day/Easter/Spring time consideration, we've rounded up a bunch of fabulous, different, creative and yummy ways you can spice up your egg-cellent (see what I did there?) cooking!
The Classic: Toad in Hole or Egg in Hole

Toast and egg in one? You've got me convinced. This deliciousness is pretty simple to create, just cut out a circle (or any other shape you'd like), break the egg into the hole and cook on a pan, like you would normally.
Egg Cups and Tarts

This is one of my personal favourite recipes because a. there is no real recipe and b. the possibilities are pretty endless. Simply break eggs into muffin tins, and load up on any spices or garnishes you want. You can also line the tin cups with bacon or bread or even hash browns. If you're going the bread route, also try different doughs like phyllo or a pastry shell. Get some veggies in there as well with peppers or spinach. Bake at around 350-400 degrees until they are finished (usually about 7-8 mins).

Literally bake eggs in anything. I'm obsessed with this idea lately because it's so simple, and yet it makes something awesome, even more awesomer. I also found these scrambled egg wrapped salmon bites which I thought would be divine. For any foodies out there, I highly recommend trying a bit of truffle salt with smoked salmon and a poached egg, quite possibly the most amazing taste in the world.
