Easy Apple Cream Pie Recipe
I got this recipe from the LCBO Food & Drink Magazine and then tweaked it the way I wanted it. Theirs called for a splash of Apple Brandy but I don't like alcohol in dessert so that was one of the things I left out. I also layered in a drizzling of maple syrup, which makes it even better.
This is a really easy apple pie recipe to make if you're not very good with home made pie crust. Here's what you need:

Filling
5 large apples - I recommend Macintosh or Spartan for their tartness
1 cup white sugar
1 cup whipping cream
2 eggs
1/3 cup pure maple syrup
Peel and core the apples and slice them so they look as shown. Toss them in 1/2 cup of white sugar and set aside.
Mix the eggs and the whipping cream with the other 1/2 cup of sugar and set aside.
Pie dough
3 cups all purpose flour
1 tsp salt
1 cup unsalted butter, cubed
1/3 cup cold water
1 Tbsp lemon juice
Prepare your pie dough by adding the flour, salt and the cubed butter, working it into the mixture. When you have what appear to be butter crumbs, mix the water and lemon together and pour that into the mixture. Work the dough into a ball and cut it in half. You don't want to work the dough too much or it will become hard.
Flour a clean large surface and roll out half of the dough nice and thin, then place it in a pie dish, pinching it around the edges.
Pour your sugared apples into the pie dish, arranging them in layers so they look pretty. Like this!
Drizzle lightly with maple syrup in circles working from the outer edge to the inner so it is laced with maple flavour into ever piece.
Pour your egg and whipping cream mixture on top. Not all apples will be covered and that's fine.
Bake for 45 min - 1 hour at 350. The apples and crust will be golden and the mixture should have a creamy/stiff texture instead of a milky one. Tastes delicious warm but even better after it's been chilled over night.
Justify this delicious indulgence to yourself (even if you find you are eating it every day for breakfast) by saying you are merely eating your apple a day!
