Mango, Blueberry and Ginger Fruit Salad Recipe
One of my favourite summer pastimes is to enjoy a relaxing breakfast outdoors on a warm morning. Try this Mango, Blueberry, and Ginger Fruit Salad with an egg and toast for a gourmet brunch at home!

What you need:
- 2 limes
- 1/3 cup of water
- 1/3 cup of sugar
- 2 mangoes (peeled and cut)
- 3 cups of blueberries
- 1/4 cup finely chopped ginger
Your 5 easy steps:
- Remove zest from 1 lime in stripe with a vegetable peeler. Squeeze 3 tablespoons juice from limes.
- Place zest, water, and sugar in a saucepan and bring to a boil, stirring until sugar is dissolved. Leave uncovered and boil for 3 minutes.
- Remove from heat and stir in lime juice.
- Let stand 20 minutes, then remove zest with a spoon and discard.
- Toss the mangoes, blueberries, and syrup in a large bowl and sprinkle with ginger.
