Mango, Blueberry and Ginger Fruit Salad Recipe

One of my favourite summer pastimes is to enjoy a relaxing breakfast outdoors on a warm morning. Try this Mango, Blueberry, and Ginger Fruit Salad with an egg and toast for a gourmet brunch at home!

What you need:
  • 2 limes
  • 1/3 cup of water
  • 1/3 cup of sugar
  • 2 mangoes (peeled and cut)
  • 3 cups of blueberries
  • 1/4 cup finely chopped ginger

Your 5 easy steps:
  1. Remove zest from 1 lime in stripe with a vegetable peeler. Squeeze 3 tablespoons juice from limes.
  2. Place zest, water, and sugar in a saucepan and bring to a boil, stirring until sugar is dissolved. Leave uncovered and boil for 3 minutes.
  3. Remove from heat and stir in lime juice.
  4. Let stand 20 minutes, then remove zest with a spoon and discard.
  5. Toss the mangoes, blueberries, and syrup in a large bowl and sprinkle with ginger.

Love blueberries. We go and pick a punch every year. Will diffenetly try this one~ nothing lbetter that fruit.
