Old Fashioned Honey Drop Jam-Jams Cookie Recipe

My Grandmother has made these cookies for as long as I can remember.  The honey-sweetness paired with the tangy zip of jam makes this the perfect afternoon snack with tea!  Or coffee.  Or booze.  Really, these are amazing with any bevvie - I shouldn't discriminate.

Ingredients:

1 cup soft shortening (or half shortening, half margarine/butter for added richness)
1 cup brown sugar
2 eggs
1/3 cup liquid honey
1 tsp vanilla extract
2 1/2 cups white flour
2 tsp baking soda
1/2 tsp cinnamon
Jam or jelly of your choice (I used seedless raspberry jam)

Yield: 3 dozen jam-jams or 6 dozen cookies if you leave them plain


Cream fats, brown sugar, and eggs together until smooth.  Stir in honey and vanilla for a light, almost whipped texture (below left).


Sift flour and baking soda together, add to the wet mixture.  Blend thoroughly and then cover with cling wrap and refrigerate overnight.  I have no idea why this is important, but it's my grandma's recipe and she's the boss.


Roll into balls, dusting your hands with flour occasionally if the batter sticks. These cookies spread a fair bit, so I experimented with both walnut- and acorn-sized balls on separate baking sheets.  The walnut size will come out about 2 inches in diameter; the acorn size just over 1 inch in diameter.

Bake 10 mins at 350F (180C) to a gorgeous golden colour.  It's best to err a little on the underdone side in order to be sure you don't overbake.


Spread the underside of one cookie with a small quantity of jam and then top with a second cookie to create a little sandwich.  I used seedless raspberry jam but you can use any jam you wish.  The cookies have a deliciously sweet honey flavour, so I prefer a jam that has a little kick - apricot, gooseberry, blackberry,  raspberry, or orange (marmalade) rather than strawberry, apple, or grape for example.  You also want to avoid jams with large blobs of fruit.

Tip: feel free to enjoy these cookies without jam if you prefer!

I make these cookies for my little brother every Xmas. Some times I have a hard time even getting enough made for him because they're so yummy everyone in the house steel them on me. You can also change this up a bit and make a thumb print ion the top of each cookie. Then while they're still warm add a teaspoon of jam.
