Strawberry Nut Parfait Recipe

Paying respect to the infamous post-Thanksgiving (Canada) glut, I made my friends a fruity parfait for dessert and skipped the cake and cookies. They were so pleased with the light sweet flavours, turkey and pie were but a distant memory.


(makes 1)

1 pint strawberries (half mashed, half cut up)
1/2 pint blueberries
1 cup vanilla yogurt
1/4 cup slivered almonds
1/4 cup pecans halves, crushed
1 Tbsp sugar



Toast almond slivers on medium heat for 10 minutes, tossing around every few minutes, until golden brown.


Wash your fresh fruits.  Smash up a half of a pint of strawberries and add some sugar to bring out the natural juices, creating a puree.


Crush up pecan halves into smaller pieces.  Layer the ingredients into serving dish (my order: yogurt, strawberry puree, blueberries, pecans, more yogurt, more puree, almonds, fresh strawberries).



Tips

* Try this parfait as a breakfasty treat by adding oats

* Play with flavours by substituting any fresh fruit in season
