Strawberry Tiramisu for Two

We love tiramisu, so adding strawberries for a Valentine kick of colour is a fabulous twist. ChickAdvisor member MizzRobin alerted us to this yummy recipe, which we thought was too good not to share!

Strawberry Tiramisu for Two

1 pint fresh strawberries, sliced (save 2 whole for garnish)
2 Tbsp powdered sugar

Puree 2 cups of strawberries with the sugar and set aside. Save the remaining strawberries for layering.

2 Tbsp coffee-flavored liqueur
¼ cup powdered sugar
¼ cup heavy cream
1 cup mascarpone cheese

Beat with a mixer on medium-high until well blended (1-2 minutes)

18 ladyfingers
? cup cold espresso

Place 6 ladyfingers on a serving plate and brush each with approx. 1 tsp cold espresso. Spread half the cheese mixture over the ladyfingers and layer with half of the sliced strawberries. Repeat with 6 more ladyfingers and the remainder of the espresso, cheese mixture and strawberries. Top with the last 6 ladyfingers.

¼ cup heavy cream
2 Tbsp powdered sugar
½ tsp cocoa powder

In a small bowl, whip the cream and sugar on medium-high speed. Spread it evenly over the top layer of ladyfingers. Dust cocoa over the whipped cream and garnish with the 2 reserved strawberries.

Spoon the strawberry puree onto two serving plates. Cut tiramisu in half, and place onto puree.
