Got to try the new Paderno carving knife. This thing is pretty nice. First thing I noticed was the metal extends throughout the grip and it doesn't have a heel that goes to the end of the blade. I find when that is there it's a pain to sharpen the bottom of the knife. So far so good. I cooked up a small ham roast and this thing went through the meat super smooth. Hard to find something bad, but we'll have to see the long term durability yet. Now I just have to get the rest of the set!    -
