In the past year, I’ve been looking for a wok that I can cook with on my electric stove. It is meant to be my default go-to cookware, and I want to infuse the "镬气" (wok-hei) in my cooking! I bought a quality flat-bottomed carbon steel wok, and despite hours of research into how to season and use it, I warped it. I got another one, and warped it again. Perhaps we weren’t meant to ‘wok’ together… until a surprise came in the mail earlier this week. A “32-cm PADERNO 3-Ply Clad Stainless Steel Wok” gifted by @thisisbutterly and @padernokitchenware in exchange for my honest review.
My first impression is that it’s heavy! I wouldn't be able to toss my food in the wok. However, a realization came. I wouldn’t need to toss my food around anyway because you'd need a gas stove to get the wok-hei! I tried cooking Penang Char Kway Teow with the wok, and wow! I am impressed at myself and the wok! As expected, there was no wok-hei, but it does char the noodles well. And, as you can see, stainless steel can be non-stick! The 3-ply construction helps it heat up quickly and maintains the heat well! The shape is also on point and keeps the food in the wok as I stir-fry like the hawker stalls in Penang! Last but not least, it cleans really well – no scrub needed!
Overall, I’m pleasantly surprised by how much I enjoyed cooking with this wok. I should've just bought this wok in the first place.
