My husband has Hashimotos and needs to be gluten free so I have been experimenting with gluten free products for years. This is by far the best flour I have ever used! It can be substituted 1:1 in any recipe that calls for regular flour and the taste and texture is hard to tell apart from glutenous products! Every other gluten free flour that I have tried (even some of the better/more expensive ones) seems to leave my baking and cooking with a grainy texture, but when I use PC brand, most people can’t even tell they are eating gluten free. I use it for baking, breads, batters, and coatings. The only problem is that as word gets out and it gets more popular, it’s harder to find on the shelves!! I think PC needs to increase production on this item because Superstore is out of it more often than not lately. Excellent product! I highly recommend! -
