Cottage cheese
This is our usual cottage cheese, we love it as a side dish, or for a light snack . Also great to bring in lunches. I like is with cut pineapple and almonds. Also use it to make a layer in homemade lasagna instead of ricotta!!
My favourite way to eat cottage cheese is just with some dried dill - this nice savoury version goes great with some crackers or bread for a filling afternoon snack that packs a protein punch. I usually get the Nordica 1% cottage cheese (500g) - the larger size of the container is great for me to be able to portion them individually with dill in my lunches. I have also used this as a ricotta substitute in lasagna - if you blend it, the lumpiness goes away for those that don't like the texture.
