I really like the halo top brand of ice cream as it is a collection of indulgent treats although more health-conscious. This is a great flavour overall if you’d like mint that is not overwhelming in flavor. Try it for yourself! The only downside is the price per container but it’s worth it!

The ingredients are okay if you don't mind erythritol on the list. The taste is a bit watered down, but it is not too minty, and the chocolate chips are a nice addition to the texture, which is close to granita rather than traditional ice cream.
