These breakfast potatoes are great for breakfast.. My little ones love them!.. I just pop them in the oven..and..Done! Pairs perfectly with bacon & eggs!

These are sooooo delicious! When made in a frying pan, they crisp up very nicely and don't take very long to prepare. The only downside to these potato pancakes are their greasiness. I need to lay them out on a piece of paper towel before eating in order to sop up the extra oil from them. The taste makes it worth it though.

These are our breakfast go-to, as they taste amazing with bacon and eggs! So crispy, and my whole family are fans! Delicious!
