I love ice wine and Peller estate does a great job with theirs. My husband and I have gone to the winery before too. Great ice wine for special and not so special occasions! Sweet, rich and complex flavour. A must
I LOVE ice wine. Don't even get me started. I have been going wine tasting at least 1x a year at Peller's winery for a decade. And in the Niagara terroir for much longer than that. Peller has some of my very favourite ice wines. Don't be fooled by some 'ice wines' being produced in warmer climes - they take grapes, shove them in a freezer and then squeeze. The traditional method that Canada (which produces about 90% of the world's ices) borrowed from German tradition is that the grapes are left on the vine and allowed to develop their sugars in the warm days of autumn. The grapes concentrate the sugars - and when they are pressed frozen so the juice is very concentrated. You get about 1 drop of juice per grape: hence the price. Peller does it right and they balance the acidity with the sweetness.
They offer ice wines in Vidal, Riesling and the glam Cab Franc (red ice wine). All worth a try... on their own, over premium vanilla ice cream, or with vodka in a martini. Me? I think its too fantastic to mix with anything and tend to prefer the Riesling ice. Its about $60/ 373ml bottle.
If you like dessert wines then you have to give Peller Estates Premium Ice Wine a try. I’m sure you’ll love it as much as we do. Its best served ice cold and can also be used to make other cocktails, you can get recipes for these on they’re web site. What make's ice wine so different from other wines is that the grapes used to make Ice Wine are always picked at temperatures at least -10 c, with the grapes frozen on the vines and hand picked in the middle of the cold Canadian night. Ounce picked, the grapes are pressed immediately while still frozen. Each frozen grape only gives one drop of frozen juice. Leaving the grapes on the vines so long allows the grapes to freeze and thaw eight to ten times before they are picked. This process allows for more complex flavours to be released into the juice of each grape. We’ve tried their Vidal Ice Wine that is a golden color and has an aroma of lemon marmalade, caramelized oranges, peaches and a touch of honey. Its tasting profile is of intense flavours of honey, Lemon, star fruit, quince and brown sugar. They also have Riesling Ice Wine witch is also a golden color, a Cabernet Franc Ice Wine that is a cherry red color and is great with chocolate desserts and they have an Oak Aged Vidal Blanc Ice Wine that is a golden yellow color and has layers of sweet fresh tropical fruit.
