Refreshing!

This cookie was amazing. I love the shortbread cookie because it has a nice crumble and bit to it. It also has a light butter taste to it which gives it a shortbread flavor. The lemon flavor in the cookie is also strong enough where you can really taste it. It almost has a lemonade taste to it. I find the raspberry filling to be rich and delicious. It tastes like a raspberry puree. The lemon and raspberry work very well together and give a refreshing flavor combination. The sugar on top of the cookie adds a mild sweetness and also a nice crunch.
