coffee that can be purchased on the shelf at the store or even specialty places like Starbucks has been there for a looong time, roasted months ago. The reason I don't buy this kind of coffee is because of a fungus that grows on coffee beans. This form of fungus creates mycotoxins that make their way into coffee by adhering to dried coffee beans. Once the mycotoxins have latched onto the dried coffee beans, they are incorporated into the process of grinding. Yum.
Java Blend roasts their beans in small batches every day. Freshly roasted, freshly ground. No mycotoxins and better tasting coffee. If you can get locally roasted coffee go for it. Think about the fungus next time you pick up a can of Maxwell House on sale. It's on sale for a reason.
